We gather what named outlets found, then check it against the makers' own numbers. Our outlet sources are America's Test Kitchen's knife block set review, Serious Eats' nine-set knife block test, and GearLab's hands-on Wüsthof Gourmet review. We check every claim against the specs Wüsthof and Shun publish, and against the live Amazon listing for each exact ASIN on the check date. We run no lab tests of our own; our job is to gather what expert sources and maker specs already agree on. Where an outlet tested a different series or piece count than the set we rank, we say so, and we do not borrow that verdict for our SKU. Set Composition figures are our own count, taken from each maker's published contents list and shown in full so you can check it yourself.

How far named outlets that really tested the product or its line agree. Our three are Serious Eats' nine-set knife block test, GearLab's hands-on reviews, and America's Test Kitchen's knife block set review. This factor is weighted highest. We cut it whenever the outlet tested a different series or piece count than the set we rank.

Cutting Performance

25%

Blade build, steel and hardness where the maker publishes it, edge shape, and the care a given edge asks for. Forged and clad blades score above stamped ones. An unpublished hardness figure is scored as unpublished. We never guess one.

Set Composition

20%

Our answer to the test-kitchen charge that block sets are padded. We count knives against four core jobs: chopping, paring, utility, and serrated slicing. We then subtract for repeated blades, and for knives that overlap a blade already in the block. Non-knife pieces and empty slots are noted but not scored as knives.

Build Quality & Warranty

15%

What the handles are made of and how they are built. Where the knives are made. What the block is made of, and how many slots it has. We also read the warranty and service terms as the maker words them. That includes whether sharpening is thrown in.

Value

10%

Price per usable knife at the checked price on our check date. Not price per piece. Price per piece is the number the box wants you to use.
