Blade build, steel and hardness where the maker publishes it, edge shape, and the care a given edge asks for. Forged and clad blades score above stamped ones. An unpublished hardness figure is scored as unpublished. We never guess one.

Our answer to the test-kitchen charge that block sets are padded. We count knives against four core jobs: chopping, paring, utility, and serrated slicing.
