Is Five-Ply Cookware Actually Better Than Tri-Ply?

The verdict was about feel rather than physics — "We appreciated this cookware's solid feel and handsome appearance" — which is roughly what five bonded layers buy you. More aluminum means more thermal mass, so the pan sags less in temperature when cold food lands in it. It also means more weight in the hand.

Made In publishes the headline number of this guide: oven safe to 800°F. Cheap cookware usually means a thin pan with a disc welded to the base. This is not that. The Tramontina Tri-Ply Clad set is built as true clad cookware, with the aluminum core running the full height of the pan exactly as the All-Clad's does. The physics that justify clad cookware are present here at $249.95 on our check date, which is also the figure Tramontina publishes on its own site.

Tramontina also commits to two things the premium sets do not match. Its Signature Tri-Ply Clad set page states NSF certification, a food-service standard, and dishwasher safety — which All-Clad explicitly does not offer. A lifetime warranty covers the set. For a first real kitchen, or a second one, that combination is difficult to argue with at this price.
